Guacamole
Texas is all about Tex-Mex, and guacamole is one of the usual suspects. Every Tex-Mex joint in Texas claims to have the best guacamole in the world using their ‘world famous’ super secret guacamole recipe. This may be an oversimplification, but guacamole is basically fresh chunky tomato salsa mixed with mashed avocado. There, I said it. (Carefully waiting for bolt of Tex-Mex lightning to strike me down)
I will, however, resist the urge to write my recipe as follows: 1. Peel, pit, and mash avocados. 2. Add salsa. 3. Eat.
This is my go-to guacamole recipe. It may appear as though it's just my salsa recipe with avocados but in reality, it's avocados mixed with my salsa recipe. No, these aren't the droids you're looking for.
- 4 ripe hass avocados peeled and pitted
- 3 roma tomatoes diced
- 1 clove garlic minced
- 1 pepper, your choice of heat seeded, minced
- 1 lime juiced
- 1 tsp olive oil
- 1 tbsp cilantro chopped
- 1/4 red onion finely diced
- 1/2 tsp oregano
- 1/2 tsp cumin
- 1/2 tsp salt
Put avocados in a bowl with 1/2 of the lime juice and lightly mash with a fork.
Add salsa ingredients to the bowl.
Mix, cover, and let sit for at least one hour before serving.
