Pumpkin Spice Coconog
My Pumpkin Spice Coconog recipe is Whole30 compliant and dairy-free, but definitely not flavor-free. Using a Vitamix blender gives it an even creamier consistency!
Ingredients
- 2 cups coconut milk
- 4-6 pitted dates chopped
- 1/4 cup pumpkin puree
- 1/2 tsp cinnamon
- 1/4 tsp pumpkin pie spice
- 1/4 cup espresso or very strong coffee
Instructions
- In a small saucepan, heat the coconut milk until hot but not boiling.
- Combine all ingredients in a Vitamix (or blender) and blend on high for 2 minutes.
- Serve in a mug topped with a sprinkle of cinnamon.
Notes
Add a shot of rum to make it a true nog…
