- Cuisine: American
- Course: Breakfast
- Time: prep 15 min, cook 15 min, total 30 min
- Serves: 4 waffles

## Ingredients

- 2 cups flour
- 1/2 tsp salt
- 1 tbsp baking powder
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- 1/2 cup milk (unsweetened coconut or almond)
- 1/2 cup yogurt (unsweetened coconut or plain)
- 1/2 cup pumpkin puree (canned)
- 1/2 cup coconut oil (melted)
- 1 tbsp syrup (corn or maple)

### Pumpkin Pie Spice

- 3 tbsp cinnamon (ground)
- 2 tsp ginger (ground)
- 2 tsp nutmeg (ground)
- 1 tsp allspice (ground)
- 1 tsp cloves (ground)

## Instructions

1. Combine dry ingredients in a bowl with a whisk or sifter.
2. In a separate bowl, combine wet ingredients and whisk until blended well.
3. Pour the wet ingredients into the dry ingredients mixture and stir until combined. Try not to overmix, some lumps here and there is fine!
4. The batter should sit for a few minutes so now is a good time to heat your waffle iron.
5. Spray the waffle iron with non-stick spray then pour about 1/4 of the batter onto the waffle maker (about 2/3 cup).
6. Cook until crisp. I usually use the second to the highest setting on my flip Belgian waffle maker.
7. Serve with your own assortment of toppings!

## Notes

Note: the pumpkin pie spice recipe included in this recipe makes about five tablespoons.  Only use two teaspoons for this waffle recipe!
