Mediterranean Cucumber Salad

This Mediterranean Cucumber Salad recipe creates a refreshing salad that is great for a warm summer or to accompany gyros or other Mediterranean meat dishes. I have found myself making this dish more often now that I have a spiralizer – a great kitchen tool with so many uses!

Ingredients
- 1 cucumber halved and sliced
- 1 cup grape tomato cut in half
- 1/4 cup kalamata olives sliced
- 1/4 red onion(s) finely chopped
- 2 tbsp nonfat feta cheese crumbles
- 5 mint leaves chiffonade
Dressing
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1/2 tsp garlic powder
- 1/4 tsp oregano
- salt and pepper to taste
Instructions
- Mix all ingredients except mint together in a bowl
- Add dressing and toss
- Sprinkle chiffonade mint over salad before serving
